Lisas Rebel Greek Salad

Ingredients
1 PT Grape Tomatos, halved (I use a combo of Yellow and Red)2 Med size Cucumbers, Rough Chopped1/2 cup Diced Onion2 oz Kalamata Olives, Halved2 oz Feta Cheese, Crumbled1/2 cup Quinoa ( Cook per Pkg instructions, be sure to rinse dry quinoa first, it can be bitter)Dressing1/4 cup EVOO1/4 cup Red Wine Vinegar2 tsp OreganoSalt and Pepper To taste
Directions
Cook Quinoa per package instructions, cool in fridge
Chop, siice or dice addl ingredients
Whisk together dressing

Toss together, Better if it marinates a bit before serving. Make in AM serve in PM or overnight
