Sweet Potato, one, peeled and choppedWater, 2 cupsCinnamon StickOatmeal, 1 cup dryRaisins or Dates (a small handful) or Maple Syrup, 1 tbsp as OPTIONAL sweeteners listed in order of calorie count from highest to lowest.Cinnamon powder, to taste, optional
Place the cinnamon stick in the water and put on high heat. Peel and chop the sweet potato and place in the water. Bring to a boil and the simmer once it starts to boil. Cook until soft but not mushy. Once at desired softness, stir in the oatmeal and cover letting the liquid absorb. Add more oatmeal if you want it less wet. Cook to your preferred consistency. If you are using the raisins or dates for sweetening, add them with the oatmeal (if you like them soft) or add them once the oatmeal is in your serving bowl. Add maple syrup and/or cinnamon powder prior to serving.
