1 TBS extra virgin olive oil2 med onions, sliced0.5 tsp cumin seed1 small red bell pepper 1 TBS water3 scallions, chopped2 cans (14-16) chickpeas, rinsed & drained2 cups chopped fresh basil2 cups hot cooked brown rice
cook rice according to package.
Heat oil in large skillet over med-high heat. Add the onions and cumin seeds and cook, stirring frequently, for 7 min. Add the pepper and water. Cover, reduce heat to low, and cook for 2 minutes. Add the scallions and chickpeas and cook for 2 minutes. Remove from heat, and add the basil. Serve with rice.
