Garlic Mushroom Enchiladas

1 T Extra virgin olive oil2 Garlic cloves1T Onion diced6 Corn tortillas1 can Enchilada sauce1/4 c. Mexican cheese mix15 oz can Mushroom stems and pieces or 1 pound of fresh mushrooms
Heat oil in medium saucepan. Brown the onion and garlic slowly. Drain mushrooms and add carefully to saucepan. Be careful of splashback. Pour a thin layer of enchilada sauce on the bottom of a 9x9 glass pan. Once the mushrooms have browned, spoon a small amount into a tortilla. Wrap tortilla around mushrooms and place seam down on bottom of pan. Pour remaining enchilada sauce evenly over enchiladas. Sparingly place cheese over each enchilada. Bake at 350 degrees for 20 minutes to melt cheese. After letting them cool, serve two enchiladas to each person. If you have meat eaters in your family or as guests, shredded chicken is an easy addition to the inner part of the enchiladas. Ole!
