Plantain Rounds

Ingredients
2 ripe plantains1 cup tapioca flour1 tsp sea salt
Directions
Preheat oven to 375F.
Puree plantains in a blender or food processor.
Add pureed plantain and remaining ingredients to large bowl. Mix well, until you have a thick, smooth dough.
Line a baking sheet with parchment.
Spread 2-3 tablespoon dollops of dough on parchment, spreading with back of spoon into a round flat circle, approximately 3 inches in diameter and less than 1/4" thick.
Bake for 20-25 minutes or until buns just begin to turn golden. For a chewier bun, remove earlier; for a crispier bun, wait until you see the edges turn a more defined golden colour.
