Sausage Zucchini Skillet

Ingredients
1lb Italian sausage, casing removed2 large Zucchini, chopped1 large sweet onion, chopped1 large tomatoe, diced or chopped2 tsp diced garlic1 can Fire Roasted (or plain) diced tomatoes
Directions
Cook sausage over medium heat, breaking up, until browned. Remove sausage to a plate, reserve fat in pan. Sweat onions over low heat 3-5 minutes in reserved fat until softened. Add zucchini and cook for 3 minutes. Add garlic and all tomatoes. Stir in sausage and heat through until zucchini is fork tender.
