GF Oat Flour Chicken & Sausage Gumbo

Ingredients
3/4 cup oat flour1/4 cup quinoa flour1/2 cup corn oil12 oz BLSL chicken thighs (chopped into bite sized pieces)2 link pork & venison smoked sausage (chopped into bite sized pieces)4 tbsp minced garlic1 med onion, choppedSalt/Pepper/Tobasco, as desired
Directions
Saute' flours in screaming hot skilled or pot using corn oil. This is making your roux (soup base). Continue cooking roux until it reaches your preferred darkness (darker roux=stronger flavor).

One the desired color is achieved,add 3 quarts of water, garlic, onions, chicken, and sausage. Bring to a boil. Simmer for 1-2 hours until ready to serve. Season to taste with salt and pepper.
