Avocado and Tomato Salad

Ingredients
Place olive oil and balsamic in jar with mustard. Season with fresh ground pepper and shake to combine. Pit and remove avocado from skin. Cut into wedges or slices. Cut tomato into wedges. Combine avocado, tomato and dressing in a medium bowl. Place one cup spinach on plate and spoon 1/4 of avocado mix over. Garnish with fresh ground pepper and sea salt if desired.
