Skinny Black Bean Mexican Pizzas

4 large corn tortillas1 can black beans, drained with juices reserved.5t cumin.25 t cayenne pepper.25 t smoked paprika.25 t chili powderSalt and pepper to taste6 T Colby cheese, grated1 Roma Tomato, chopped2 cups romaine lettuce, chopped1 avocado, chopped1/2 can black olives, sliced
Place tortillas on a cookie sheet and bake 10 minutes in a 350, preheated oven.
Meanwhile, pour beans in food processor. Add spices and puree, adding some of the reserved liquid until the beans have the consistency of refried beans.
When tortillas are done, divide the bean mixture among the four tortillas, spreading it to cover each. Add 1.5 T of cheese to each tortilla. Top with onion and black olive (dividing equally between the four pizzas). Bake another 10 minutes.
Remove from oven. Top with lettuce, tomato, and avocado. Serve immediately.
Serving Size: Makes 4 pizzas (2 Servings)
