Cucumber and Tomato Salad

Ingredients
1 cucumber, unpeeled1 pint cherry tomatoes1 tbsp olive oil2 tbsp red wine vinegarSalt and pepper to taste1 garlic clove, crushed (optional)
Directions
1. Halve cucumber lengthwise, scoop out seeds with spoon, and slice into half moons

2. Halve cherry tomatoes

3. Combine cucumbers and tomatoes in a bowl, season well with salt and pepper.

4. Add vinegar and oil, stir. Can add crushed garlic or other additions at this point, as well.

5. You can eat the salad right away, but I think it is best after sitting at room temp for 20-30 minuts.
