Spicy Spinach Rice Casserole

Ingredients
2 cups cooked brown rice1/4 cup butter1 cup chopped onion8 oz chopped mushrooms3 cloves garlic1 can (14 oz) canned milk3 eggs4 oz cheddar cheese16 - 20 oz frozen spinach, thawed and drainedSaltLemon Pepper1 Tbs lemon juiceHot paprika
Directions
While rice is cooking, sauté onions in butter for 5 minutes. Add chopped mushrooms and crushed garlic and sauté another 5 minutes. Can d 1/2 cup white wine if desired.
Combine milk, eggs, salt, pepper, lemon pepper, and lemon juice with a disk. Mix in cheese, spinach, sautéed mixture and rice.
Pour into sprayed 8 by 12 casserole. Sprinkle liberally with paprika. Bake 30-35 minutes at 350.
