Pineapple Chicken for Bodybuilders

12 oz boneless, skinless chicken breast4 tbsp extra virgin olive oil6 tbsp Splenda or other sugar replacement6 tbsp Simply Heinz or other low-sugar ketchup4 tbsp low sodium soy sauce1 yellow bell pepper1 can Dole pineapple slices
Directions
Heat olive oil in a pan on medium heat.
Add in onions and peppers; saute until golden brown.
Add chicken and continue to stir-fry until no longer pink inside.
Combine together the ketchup, soy sauce, Splenda, and pineapple juice and add to the pan.
Lower heat and cover, simmering for 20 minutes.
Before serving, top with pineapple.
Serving Size: Makes 4-6 servings.
