Curry Broccoli Soup

Ingredients
* 1 small-medium head broccoli* 1 medium onion* 2 cloves of garlic* 3 or 3 1/2 cups Chicken Stock (Low Sodium)* Salt and Pepper to taste* 1 cup almond or coconut milk (I used almond)* 1 tbsp Red pepper paste (Optional)* Non-stick spray or 1 tsp of oil
Directions
Dice onion and garlic and sauté in medium heat for 4 minutes with oil and curry powder. Add in Broccoli, salt and pepper and stir for another couple of minutes. Then add your stock. Bring it to a boil and low the heat to simmer for 20 mins.
Turn off the heat, add the remaining cup of almond milk and stir.
Then, using an immersion blender, blend the soup.

It makes 4 servings
