Ham & Potato Casserole

Ingredients
3 Tblsp. butter1/4 cup flour3 cups milk3/4 cup cheddar cheese2 cups cubed leftover ham7-8 small potatoes, sliced thin1/3 sweet onion, sliced
Directions
Melt butter in saucepan and stir in flour to make a roux. Add milk and heat until boiling - boil for 1 minute. Reduce heat and add cheese. Set aside.

Slice onions and potatoes. In a baking pan, layer potato slices, a few sliced onions, and 1/2 the ham. Add another layer of potatoes, onions and ham. Finish with a layer of potatoes. Pour cheese sauce over all , cover with foil, and bake in 350 degree oven for about an hour.

Remove the foil and bake for another 15-20 minutes. Makes 8 - 10 servings.
