Bryant Terry's Cumin Cayenne Carmelized Onion Mashed Potatoes

Cumin, 2 tbsp potatoes, yukon gold, 20 oz Olive Oil, 5 tbspOnions, raw, 1 large dicedPepper, cayenne, dashAlmond Milk, Silk, True Almond, unsweetened, original, 1 cup Thyme, 2 tbsp Salt, 1 dash Pepper, white, dash
Peel and cut up potatoes. Place in cold water and bring to a boil. While boiling, in a separate pan, combine olive oil, onions, cumin, cayenne and thyme and allow to caramelize- roughly 30 mins, stirring frequently. When ready, stir in almond milk and allow to simmer to thicken- 1 minute or so. When potatoes are done, drain and return to pot cooked in. Pour in caramelized onion mixture and stir until well combined. Add salt and pepper to taste.
