Zucchini Almond-Coconut-Raisin-Chocolate Chip Cookie Bar

Ingredients
1 cup applesauce1/4 cup margarine,softened3/4 cup white sugar6 Tablespoons of Egg White Substitute (2 servings)1 teaspoon vanilla extract1 3/4 cups all-purpose flour1/2 teaspoon salt1 1/2 teaspoons baking powder12 Tablespoons flaked coconut (3/4 cup)16 Tablespoons chocolate chips (1 cup)3/4 cup raisins1 cup grated almonds2 cups grated zucchini (place on paper towels to sop up excess moisture)
Directions
1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.

2. In a large bowl, cream together the margarine, white sugar and applesauce. Mix in egg substitutes and vanilla. Sift together the flour, salt and baking powder -- mix into the creamed mixture. Stir in the coconut, raisins, chocolate chips, almonds and zucchini. Spread batter into the prepared pan.

3. Bake in preheated oven for 40 minutes.
