1/4 Cup Chopped Mushrooms1/4 Cup Chopped Onion2 Cloves Garlic1/4 Cup Egg Beaters3/4 Tablespoon Fresh Oregano, Thyme, and Basil, or 3/4 Teaspoon Gourmet Garden Italian Herb Paste1/4 Cup Plain Bread Crumbs1 Pound Ground Turkey 2 Pieces of Light String Cheese cut into 8 Pieces
Combine mushrooms, onions, garlic, egg beaters, and herbs in a mini food processor and chop finely.
Combine ground turkey and bread crumbs in a bowl, mix in Egg Beaters mixture and mix thoroughly.
Use a scoop, create eight separate meatballs, pressing one piece of the string cheese into the center of the ball and closing the uncooked meat around it.
Bake at 400 degrees until internal temperature registers at least 170.
