Indian Bitter Melons

Ingredients
Ingredients:*Bitter Melon, 4 cup (remove)Boston Market New Potatoes, 1 serving (remove)Red Ripe Tomatoes, 2 large whole (3" dia) (remove)*Extra Virgin Olive Oil, 4 tbsp (remove)*Kosher Salt, 2 tsp (remove)Lime Juice, 1 lime yields (remove)*Hot Chili Peppers, 1 pepper (remove)*Coriander, ground, 2 tsp (remove)*chick pea flour (Besan), 0.25 cup (remove)*onion, chopped or sliced, 300 gram(s) (remove)
Directions
- add chick pea flour, salt, hot peppers and 1 tbsp oil to sliced bitter melons, spread on a cookie sheet and bake in hot oven for 15 mts.
- in a separate pan, also bake sliced potaotes
- meanwhile heat rest of oil in a wok, add cumin seeds, and fry onions until transluscent
- add sliced tomoates and season with salt and pepper
- mix in the crisp bitter melon and baked potatoe slices
- add lime juice, cook for another 5 minutes
- serve as a side dish with roti and daal.
