Vegan Blueberry Pancakes

2 Cups Organic Unbleached White flour.1 tbsp Baking Powder2 tbsp Organic Granulated Sugar1 tsp Salt2 tsp Egg Replacement Powder1/2 Cup Water1 tbsp VanillaApplesauce, Unsweetened 1/3 Cup1 Bag Cascadian Farm Organic Frozen Blueberries.
Mix the egg replacer following the box instructions- whip till frothy (set aside)
Mix all dry ingredients- set aside.
In a seperate bowl add applesauce, blueberries, vanilla and egg replacer stir together. Add the wet ingrediants to the dry stiring slowly. DO NOT OVER MIX THEY WILL GET TOUGH. (note: I always use a wooden spoon and only mix enough to where all the colors are combined and no more powder is visible.) DO NOT USE A MIXER. Once combined grease a skillet and cook and flip just like pancakes. I always serve with applesauce instead of syrup but you may do what you like. DO NOT FREEZE LEFTOVERS.
