Oat Flour Pumpkin Pancakes

Ingredients
1½ almond milk½ cup pumpkin puree2 large eggs2 cups whole grain oat flour1 ½ tsp baking powder½ tsp pumpkin pie spice
Directions
Preheat electric griddle to 400° F. Mix wet ingredients together. Mix dry ingredients together. Combine and stir until no clumps are visible. Pour on batter and cook until bubbles form on the surface then flip. Cook an additional 3-4 minutes or until there is no wet dough in the middle.

Serving Size: Makes approximately ten 4 inch pancakes.
