Honey-Ginger Chicken Stir-Fry

1/4 cup honey1/4 tsp black pepper 1/2 salt1 Tbsp canola oil 1 1/2 tsp lemon juice 1 package (16oz) frozen stir-fry vegetable blend 1 tsp ground ginger 4 tsp low-sodium soy sauce 1-1/4 lbs boneless skinless chicken breasts, cut into 1/4-inch slices
1. In a small bowl, combine the honey, soy sauce, lemon juice and ginger; set aside.
2. Sprinkle chicken with salt and meat tenderizer. In a large skillet or wok, stir-fry chicken in oil for 3-4 minutes or until lightly browned. Add vegetables and water chestnuts; stir-fry 3-4 minutes longer or until vegetables are crisp-tender.
3. Stir honey mixture and sitr into chicken mixture. Cook for 3-5 minutes or until heated through and chicken juices run clear. Serve with rice.
