CJ's verson of Cream Cheese Chicken

Ingredients
Directions
1-6oz Chicken Breast1 cup Chicken Broth (99% fat free)4 cloves garlic2 oz Cream Cheese (fat free)1/2 Tbls. Flour
Brown chicken for about 5 mins. using Pam spray.
Add minced garlic.
After 1-2 minutes add a little chicken broth to deglaze pan.
Add all but 2 tablespoons of chicken broth, bring to boil then simmer (Covered) 20-25 minutes until chicken is done.
Remove chicken - keep warm
Mix flour with remaining broth and add to pan - mix.
Add cream cheese, mix until thick and bubbly.
Place sauce over chicken and serve.

Had a different chicken dish planned, but it needed 6 hr. marinating. So I found this and made it. It was great. Hubby didn't know cream cheese was in it and I did make the mistake of not adding the ck. broth at the beginning so I had to add xanthum gum to thicken. It was a hit, will make again. - 5/27/08
