MOnique's Veg-A-Lot Pizza

Ingredients
3 Cups wheat flour1 pack dry yeast1/4 cup extra light olive oil1 tsp salt1 cup marinara sauce1 cup sliced green bell pepper1 cup sliced red bell pepper1 cup chopped onion1 cup fresh sliced mushrooms1 tbsp. sliced black olives1 cup fresh chopped parsley2 tbsp. fresh chopped basil1 tbsp. red pepper flakes1 cup part skim mozarella cheese
Directions
First dissolve yeast in warm water. In a large bowl, combine yeast, 2 tablespoons of olive oil, and salt. Once combined, slowly add flour making sure that it comes together and forms a ball. Now add 2 more tablespoons of olive oil in bottom of bowl. Coat both sides of ball and cover bowl with plastic wrap. Place a warm towel on top of bowl and place in a cool place. Let dough double in size for about one hour. Now, take dough and seperate into two pieces. once again form ito balls and let set in the same style for an additional 15-20 minutes. Now dough is ready to spread out and add toppings. Spread marinara sauce over both pizza doughs. Add to each onion, bell peppers, mushrooms and olives. Sprinkle parsley and basil on top of each pizza. Sprinkle mozzarella cheese on each and bake at 500 degrees for 15 minutes or until golden brown. Once done add red pepper flakes and last of olive oil. Serves 2 people. Enjoy!!!
