1 pkg Soba buckwheat noodles (7oz)1 medium carrot, shredded1/2 cup shredded red/purple cabbage2 scallions, chopped2 Tblsp sesame seedsDressing1/4 cup toasted sesame oil2 Tbls tamari (wheat-free)1 Tblsp rice vinegar2 cloves garlic, minced1 tsp minced ginger1/4 tsp red pepper flakes (or to taste)
Cook noodles according to package directions, drain well. Combine with teh carrot, cabbage and scallions.
Combine oil, tamari, vinegar, garlic and ginger in blender or small food processor and blend until thoroughly combined.
Pour dressing over noodles mixture and mix well.
Serving Size: Makes 5 servings, approx 1 cup each
