Beef-flavored Quinoa and Vegetables

2 cups low-sodium beef broth1 cup dry quinoa2 tablespoons olive oil6 chopped mini sweet peppers1/2 cup chopped green bell pepper1/4 cup chopped celery1/2 cup chopped yellow onion1 clove garlic, minced
Bring broth to a boil in a saucepan with a tight-fitting lid. Add quinoa and return to boil. Cover and reduce heat to medium. Simmer for 12 minutes.
Remove from heat, fluff, and recover. Stand off heat for 15 minutes.
Meanwhile, heat oil in skillet over medium-high heat. Add all chopped vegetables except garlic. Stir occasionally and cook until tender and beginning to brown. Add garlic and cook for 1 minute more.
Stir vegetables into quinoa and serve.
Serving Size: Makes 8 servings of 1/2 cup
