2 cups chopped fresh spinach leaves2 cups sliced mushrooms1/2 cup diced tomato8 eggs1/2 cup shredded mozzarella cheese1/2 cup diced avocado
1 - Spray a medium skillet with non-stick spray and heat over MEDIUM-HIGH heat until a drop of water bubbles and quickly evaporates.
2 - Add spinach and mushrooms to skillet. Cook and stir until slightly softened, about 2-3 minutes. Add diced tomato and cook an additional minute or two, until warmed through.
3 - Whisk together eggs, salt & pepper. Pour into skillet with vegetables. Stir occasionally until eggs are fluffy and set. Remove from heat. Top with shredded mozzarella and cover until cheese is melted.
4 - Top each portion with about 2 tablespoons of diced avocado and serve!
