12 oz pkg wide egg noodles3 cups lite sour cream2 cups 1% fat small curd cottage cheese2 ox pkgs cream cheese 1/3 less fat6 oz unsweetened apple sauce4 eggs8 egg whites1/2 cup granulated splendacooking spray3/4 cup Kellogs Special K High protein cereal or any cereal you like2 tsp vanilla extract1 tsp ground cinnamon
set oven at 350 degrees
spray 9 x 13 inch baking dish
boil large pot of lightly salted water. Add noodles and cook 8 minutes. should be al dent. drain noodles and return to pot
combine sour cream, cottage cheese, cream cheese,applesauce and cinnamon in a bowl and mix thoroughly. Pour into noodles
in another bowl combine eggs, egg whites, splenda and vanilla and whisk together. pour into noodle mixture and mix well.
Crush the Kellogs special K into crumbs
transfer to baking dish, sprinkle crumbled ceral over the top, bake 50 minutes or until pudding is set. Let set 5 minutes before cutting into squares.
