Denver Egg Scramble - 4.8 g Net Carbs

Ingredients
1 cup green bell pepper, chopped1/2 cup chopped onion8 eggs4 ounces sliced deli ham (about 8 slices), chopped1/2 cup shredded cheddar cheese
Directions
1 - Spray a medium skillet with non-stick spray and heat over MEDIUM-HIGH heat until a drop of water bubbles and quickly evaporates.

2 - Add bell pepper and onion to skillet and sauté until crisp-tender. Add ham and cook for an additional minute or two.

3 - Whisk eggs. Pour over vegetable and ham mixture. Stir occasionally until eggs are fluffy and set.

4 - Top scrambled eggs with shredded cheddar cheese. Cover until cheese is melted.
