Turkish Spinach and Rice

Ingredients
2 tbsp olive oil1 large onion chopped3 cloves of garlic1/4 cup tomato paste1 kg fresh spinach or 2 packages 10 oz frozen1/2 cup short grain ricesalt and pepper to tastewater to enough to cover1 cup plain low fat yogurt
Directions
In a pot on med heat add oil and chopped onion and garlic. then add tomato paste and spinach, add rice, salt and pepper, add water till it covers spinach.
Let simmer for about 30 min till rice is cooked.
serve with a spoon full of yogurt.
