Salmon Croquettes

Ingredients
Pink salmon (canned),drained - 7ozFinely chopped onion (green, red, or yellow) - 1/4 cupSriracha (or mustard) - 2 tspLarge egg - 2Lemon juice - 1 tspSalt - 1/2 tspGround black pepper - 1/2 tspPanko bread crumbs - 3/4 cup, divided Cooking spray
Directions
Combine all ingredients with 1/4 cup panko bread crumbs. Divide into 8 patties and allow to rest for 15 minutes.

Bread the patties with the remaining 1/2 cup panko bread crumbs.

Spray a non-stick saute pan with cooking spray and heat over medium heat. Cook each patty for 3 minutes on each side, or until golden brown.

Serving size is one patty.
