Warm potato, chorizo and mussel salad

Ingredients
250g (9oz) new potatoes, halved or quartered if large1/2 small red onion, finely diced25 (1oz) chorizo, diced1 garlic clove, crushed75g (2 3/4oz) cooked mussels30g (1 1/4oz) baby spinach leaves1 heaped tbsp low fat creme fraiche
Directions
Makes lunch for two.

- Cook the potatoes in simmering water until tender. Drain and tip into a mixing bowl. Add the red onion.
- Meanwhile, fry the chorizo in a hot pan until lightly coloured, then remove from heat. tir in the garlic and mussels, and tip into the bowl with the potatoes and onion. Mix gently.
- Stir in spinach, then add the creme fraiche and seaon to tate. Serve warm.
