Potato-Leek Soup

Ingredients
3 Tb. butter3 C. sliced leeks3 Tb. flour2 qt. vegetable broth or boullion4 C. chopped potatoes2-3 Tb. fresh parsley, minced1 10-oz. bag fresh spinach
Directions
Saute the leeks in the butter until soft. Add the flour and stir until the leeks are coated. Slowly stir in the vegetable broth and cook until slightly thickened. Add the potatoes and cook about 40 munites or until the potatoes are very soft. Stir in the parsley and spinach and cook a few minutes more.

Serving Size: makes 8 1-cup sevings
