2 large boneless, skinless chicken breasts, diced1/4-cup reduced sugar dried cranberries3 large celery stalks, diced3 Tbls light mayonnaise1 Tbls dried dill weed (optional)
Bake/roast chicken breasts at 350 for approximately 40 minutes (until no longer pink, but not dry). No oil or spice necessary. Allow to cool, then dice into small pieces.
Dice celery into small pieces
Add all ingredients and combine well.
Serving Size: Approximately 8 1-cup servings
