Tuna and Brown Rice Salad

Salad:640g (4 tins at 160g each) of tuna in water/brine 2 cups of brown rice, cooked4 boiled egg whites, chopped2 apples, chopped2 celery stalks, chopped1 green bell pepper, diced1 yellow bell pepper, diced3 scallions, finely chopped2 cups of spinach, dicedDressing:6 tbsp extra virgin olive oil2 tbsp aaple cidar vinegar2 tbsp fresh parsley, chopped small1 tbsp fresh lemon juice1 tsp dried, ground basil1 tsp dried, ground oregano2 cloves of garlic, mincedsalt and pepper to taste
Cook the rice beforehand and allow to cool.
Ensure all salad ingredients are cut quite small and then mix together in a large bowl.
For the dressing, combine ingredients in a blender and blitz for 10 seconds or mix by hand until well combined.
Pour dressing over the mixed salad and enjoy!
