Vegan Low carb Protein Muffin

Ingredients
30 grams (about 1/4 cup) brown rice protein powder1/4 cup flax meal1/2 teaspoon baking powder1/4 teaspoon baking soda1/8 teaspoon salt1/4 teaspoon liquid stevia (more or less)5 tablespoons water1 teaspoon rice vinegar
Directions
Preheat oven to 350. Grease a round ramekin with palm shortening (you may want to put baking parchment in the bottom).

In a small bowl, mix together the protein powder, flaxmeal, baking powder, baking soda, salt. Then stir in the water, stevia, and vinegar.

Spread into the prepared ramekin. Batter will be thick. Bake for about 20 minutes. Remove from ramekin and let cool a little before serving.

Serving Size: Makes 1 large muffin that you slice in half to make 2 servings.
