Meatloaf Minis

Ingredients
1/4 c diced onion1/4 c diced bell pepper1/4 c diced celery1/4 c diced carrot1 clove garlic chopped5 sprays cooking spray1/2 c egg white product1 lb 93% lean ground beef15 saltine crackers3/4 c tomato sauce
Directions
Spray skillet with cooking spray. Sauté onions, garlic, celery, carrots and bell pepper. In mixing bowl add beef, tomato sauce (reserve about 1/3 c tomato sauce), crackers, egg product and any seasonings you like. Add sautéed veggies. Shape into 8 individual meatloaves and place on cookie sheet with raised draining tray. Drizzle reserved tomato sauce over each meatloaf. Bake until done--about 50 minutes in 350 degree oven.
