Pumpkin Chip Bars

Ingredients
10 oz silken tofu, or 4 eggs1 ¼ cups sugar½ cup canola oil½ cup applesauce1 tbsp vanilla2 cups mashed pumpkin1 ½ cups flour½ cup wheat bran¼ cup wheat germ½ tsp nutmeg1 tsp cinnamon2 tsp baking powder1 tsp baking soda1 tsp salt¼ cup chocolate chips or candy coated chocolate1 (1.5 oz) bar chocolate-covered toffee (i.e. Skor), chopped¼ cup toasted pumpkin seeds
Directions
Preheat oven to 350°F. Grease a 15x10x1 pan.
In a food processor, puree the tofu, sugar, oil, applesauce, vanilla and pumpkin.
Pulse in the flour, bran, germ, nutmeg, cinnamon, baking powder, baking soda and salt to form a thick batter.
Pulse in the chocolate chips, toffee and pumpkin seeds.
Bake for 25-30 minutes. Cool in the pan before slicing.

Serving Size: Makes one 15x10x1 pan, 30 squares
