Zucchini Bread - Low Fat Version

Ingredients
3 eggs2 C. sugar1/4 C. Vegetable Oil3/4 C. Apple Sauce1 Tbs Vanilla2 C. grated zucchini3 C Flour1 Tbs Cinnamon1 tsp. salt2 tsp. baking soda1/4 tsp baking powder3/4 C. raisins3/4 C. dried cherries
Directions
Beat eggs. Beat in sugar, oil, apple sauce, and vanilla until thick. Stir in zucchini, flour, sinnamon, salt, baking soda, and baking powder. Fold in raisins and dried cherries. Grease and flour 2 bread pnas. Divide batter equally. Bake for 1 1/2 hours at 350 degrees. Or until tooth pick comes out clean.
