Tater tot hot dish (non-dairy/GF)

Ingredients
1 lb ground beef1 med yellow onion chopped3 cloves garlic2 lg carrots, chopped10 oz frozen peas 8 oz mushrooms diced2 tsp coconut aminos 1 can full fat coconut milk1 cup organic chicken broth1 tbsp arrowroot starch1 tbsp coconut oil3/4 package of GF tater tots
Directions
Sautee ground beef with chopped onions, garlic and carrots. Drain off fat and set meat aside. Clean pan, melt coconut oil, add chopped mushrooms, coconut aminos, and salt and pepper. Saute for about 10 minutes, until all the liquid cooks off. Meanwhile, mix broth, coconut milk and whisk in the arrowroot. Stir that into the cooked mushrooms, bring to a boil and simmer until thickened. Pour meat mixture, peas, and "gravy" into a large casserole, top with tots. Bake at 400 for about 45 minutes. You can cover with foil if you don't like your tots super crispy.
