Whole Grain Apple Cinnamon Griddlecakes

Ingredients

1 cup whole wheat flour1/2 cup all purpose wheat flour1/2 tsp baking powder3/4 tsp baking soda1/2 tsp salt1 cup fat free milk1 Tblsp lemon juice1 egg beaten2 Tblsp olive oil1 apple peeled and sliced2 tsp cinnamon1 Tbls splenda
makes 7 servings. 2 pancakes per serving
Mix milk and lemon juice in large 4 cup measuring cup.
Mix cinnamon and splenda together and sprinkle over apples.
In a large bowl stir together remaining dry ingredients.
Add egg and 2 teaspoons of the olive oil to the milk mixture which should be thick. Lemon juice makes it sour and thick. Whisk together till well mixed.
Add to the flour mix and stir lightly and quickly. Leave it lumpy.
Stir in apple mix.
Use a 1/4 cup of the batter for each pancake.
Heat 1 tsp of the oil in large fry pan & cook three pancakes at a time. Turn when griddlecakes are bubbly and look dry around the edges.
Serve with or with our syrup and butter.
Syrup and butter have not been used in the calorie count for this recipe.
Good just with applesauce as well.
