Ingredients
2 Cups Fresh Corn2 Cups Thinly Sliced Zucchini1 C Diced Onion3 Roma Tomatos1/4 Shredded Lite Cheese
Directions
Saute corn, zucchini, and onion in large pan. Add tomatoes after vegetables are half cooked. Add the shredded cheese when vegetables are almost done. Optional spices I use are a small amount of salt, pepper to tasted and sometimes I will use some cumin to taste.
