French Onion Soup (No Bread or Cheese) CROCKPOT

Ingredients
- 3 1/2 TBSP Ghee (3 TBSP for cooking the onions in 1/2 TBSP to put into soup)- 5 Large Sweet Onions, thinly sliced- 8 Cups Beef Broth, try to use low sodium- 3 TBSP fresh thyme leaves, chopped- 1/2 tsp sea salt, (a bit more if using low sodium broth)- 1/2 tsp black pepper or more to taste- 3 TBSP Sherry Cooking Wine, added 1/2 way thru
Directions
Melt 3 TBSP ghee in a large skillet; add onion. Cover and cook on medium heat for about 13 minutes, stirring occasionally. Increase heat to medium high; cook onions 10 minutes or until browned, stirring frequently. Transfer onions to a slow cooker, stir in broth, thyme, salt and pepper. Cover and cook on low for 8 hours. When there is about 3 hours remaining, stir in the cooking sherry. Continue cooking until the 8 hours is up.

Serving Size: Divide into 8 equal servings
