Tomato Curry Lentil Stew

Ingredients
1/2 cup dry lentils 1 vegetable broth (can sub water for fewer calories/sodium) 5 ounces stewed tomatoes 1/4 cup chopped onion 1 stalk celery, chopped, with leaves1 small carrot, chopped1 teaspoon curry powder (or to taste)1/4 teaspoon coriander (optional) 3 cloves garlic, minced salt to taste ground black pepper to tastecayenne pepper (optional/to taste) or Sriracha (to taste)

Directions
Saute the onion, garlic, celery and carrots until onion aromatic. Combine lentils and broth with sauteed veggies, bring to a boil.
Lower heat to simmer, add tomatoes. Cover and let simmer 30-45 minutes. Check every 15 minutes to stir, and add water/broth if necessary. Add spices last 15 minutes to taste. Taste and re-spice if necessary before serving.
