2 tblsp butter1 small onion,chopped2 cups fresh broccoli (chopped)1 cup skim milk1/4 tsp sea salt1/4 tsp pepper1 1/2 cups of low fat, low sodium chicken broth
In a medium sauce pan, over medium heat, saute onion in butter until onion is limp. Add chicken broth and broccoli. Bring to a boil, reduce heat, cover and simmer 10 minutes. Place broccoli, onion and broth in a blender (magic bullet works better to give nice creamy texture). Add salt and pepper. Blend for 5 seconds or until desired consistency is reached. Makes a 3.5 cups.
