Super Fit! Black Bean Sweet Potato Kale Soup

Ingredients
1 T evoo1 medium onion chopped2 cloves garlic, finely chopped1 6 oz can tomato paste1 1/2 tsp ground cumin1/2 tsp ground red pepper flakes3 C vegetable broth2 15 oz cans of black beans rinsed1 medium sweet potato about 8 oz, peeled & cut 1/2inch cubes1 bay leaf (optional)2-3 cups packed chopped baby kale
Directions
Heat olive oil in Dutch oven over medium heat. Add Chopped onion & garlic cloves. Cook until onion is tender. Stir in tomato paste, cumin, crushed red pepper flakes. Add Vegetable broth and sweet potato. Stir and cook over medium heat for about 10 minutes until sweet potatoes begin to soften. Add black beans and bay leaf if desired. Stir and bring to boil. Reduce heat to medium low; cover and simmer for 15 minutes. Remove bay leaf. Stir in kale. Simmer uncovered for 10 minutes
