16 oz spicy pork or venison sausageMedium onion chopped4 cloves minced garlic1 cup sliced celery2 diced sweet bell peppers, different colors14 oz can diced tomatoes, undrained 4 cups Swanson organic vegetable broth1/2 cup brown rice1 small head green cabbage chopped1 Tbsp chili powder1/2 tsp salt1 tsp paprika1/2 tsp cumin1/8 tsp cayenne pepper1/8 tsp black pepper(optional) 12 oz bag medium shrimp, cooked, thawed and tails removed (adds 40 calories per serving)
In large pot cook sausage with onion and garlic until brown. Stir in bell peppers and celery; cook and stir 3 minutes longer. Add all remaining ingredients and bring to a boil. Cover, reduce heat to low and cook (stirring occasionally) until rice is tender, about 40 - 50 minutes.
