Exotec's Chuck Pot Roast

5 # boneless beef chuck roastone red and one sweet onion, quartered5 red potatoes, peeled and quartered1# carrots, peeled and halved - 2" sectionsone can beef gravyone can beef consommeone small can tomato pastecouple of bay leaves
Prepare veggies.
Sear roast on all sides; remove from crockpot.
Place quartered onions in bottom, then potatoes.
Add a couple bay leaves.
Replace roast on top.
Pour over consomme, gravy, and tomato paste.
Dump carrots on top.
Cook on high for about 5 hours, then reduce to low and continue until it's falling apart.
Serving Size: Makes about 25 4-oz servings
