Pumpkin Oat Bars

Crust3 cup whole wheat flour2.5 cup quick oats1.5 unpacked brown sugar1 tsp salt1 tsp baking powder1 tsp baking soda2 tsp cinnamon2 sticks unsalted butter, cut into small cubes1 cup walnuts, chopped1 cup walnuts, choppedFilling0.5 cup brown sugar, packed1 large can of pumpkin (29 oz)2 tbs melted butterSalt (to taste)2 tbs flour
Preheat oven to 375.
Put all ingredients except the walnuts in a large bowl, mix with your fingertips or a pastry cutter until well combined (mixture will be crumbly)
Press half the crust mixture into a pan lined with parchment paper. Bake 12 to 15 minutes.
Mix filling; spread evenly over the bottom crust.
Mix walnuts into the remaining crust. Sprinkle evenly over the top of the pumpkin, pressing down gently when finished.
Bake for another 30-40 minutes.
Allow to cool completely before cutting.
Serving Size: Makes 24 - 2" pieces
