Red Lentils Soup

Ingredients
Lentils, 1 cup Carrots, raw, 1 medium *Parsnip, boiled, drained, with salt (1 parsnip, 9" long, 160g), 0.5 serving *Celery Root, 50 gram(s) *Canola Oil, 1 1tsp Canned Tomatoes, 2 tbsp
Directions
Grate the carrot, celery root and parsnip. In a pan, add them and 1 TBSP of cooking oil (I use canola). Let them simmer for a bit then add 2 CUPS of water and the lentils. Add 2 TBSP canned tomatoes (or 1 large tomato grated) and let them boil for 10-15 min.
