Low carb turkey meatloaf

2.5 lbs ground turkey1 cup celery, finely chopped2 tsp basil2 tsp parsley1.5 tblsp minced garlic2 tsp salt (I used Himalayan pink)2 tsp onion powder (or use a cup of finely chopped onion)2 eggs
Preheat oven to 350. In a small pan, saute celery (and onion, if chopped) with basil, parsley, garlic, salt and onion powder (if not using chopped onion). Cook on medium low heat for 10 minutes (if using chopped onion, until onions are translucent, but not brown).
Place ground turkey in a mixing bowl. Pour heat mixture from pan over turkey. Add the two eggs and mix contents until thoroughly interspersed.
Shape mixture into a loaf in a loaf plan or on a cooking sheet. If using a cooking sheet, be aware that juices from the turkey will cook out onto the pan. It will look terrifying and be a pain to clean so cover it with aluminum foil.
Sprinkle additional basil and parsley liberally on top of loaf to add color. Sprinkle salt liberally on top of loaf as well.
Cook on middle rack for approximately 1 hour or until the middle of the loaf reaches 165 degrees.
